Flip the cutlets and spray a little more oil and air fry for 5 additional minutes. Prepare a cooling rack lined with a few layers of paper towels. Heat 1 ½ - inches of oil in a large, heavy-bottomed pot until it reaches 340 degrees F (170 C). Flip it over and repeat until every surface of the chicken is coated in an even layer of panko. The only downside I noticed was the panko coating doesn’t brown as evenly in an air fryer compared to deep frying, but that’s not a big deal for me.
